Rice With Liver And Kidney Leafy Sauce

You just have to love this dish. I got the recipe from my best friend. I thought I could tweak it a little but I couldn’t get it to taste better than hers so I gave up. Her recipe is the best way this dish can be prepared. And that exact recipe is what I’m sharing with you today.

INGREDIENTS
~Cow kidney and liver
~1 tablespoon Terin curry powder
~1 tablespoon dried thyme
~3 stock cubes
~Salt
~4 fresh habanero peppers
~10 fresh tomatoes
~1 large onion
~2 spring onions (Scallions)
~1 tablespoon ground crayfish
~2 bunch green (Amaranth) Vegetables
~Vegetable oil
~2 cups of rice

PREPARATION
1) Wash and chop all vegetables: Green Amaranth, spring onions, large onion.
2) Grind tomatoes and peppers together. Grind crayfish.
3) Wash meat and cut into small pieces.

METHOD
1) Wash rice and cook using medium heat. Add 3 tbsp of vegetable oil, 1 handful of chopped onions and 1 tbsp of salt to the cooking rice. Why? To give it some flavor because eating plain rice is not fun. When rice is well cooked and all the water absorbed, set aside.
2) Season the kidney and liver with 2 stock cubes, curry powder and dried thyme. Add a little water and cook until soft. Set down the pot. Save the meat water.

3) Add vegetable oil to cover the base of a heated medium cooking pot. Allow oil to get hot.
4) Add chopped onions. Immediately followed by the cooked liver and kidney pieces. Do NOT add the meat water yet. Saute meat until the onions begins to get golden brown.

5) Add chopped spring onion. Saute for 2 minutes.

6) Add the ground fresh tomatoes and peppers. Allow to cook until tomatoes appear dark and dry and clearly separates from the oil.

7) Add ground crayfish and season with salt and 1 stock cube. Stir the stew.
8) Pour in the meat water. Allow to cook for 3 more minutes.
9) Add the chopped green amaranth vegetables. Stir to mix in with the stew. Cook for 1 minute and set down the pot.
